Parmesan & Thyme Biscuits

Parmesan & Thyme Biscuits (makes approx 20)


210g softened butter

200g plain flour

120g parmesan (or 60g each of parmesan & gruyere)

1 tspn dried thyme

pinch of salt


Preheat oven to 180.  Using a spatula or wooden spoon mix all ingredients together in a large bowl.  When combined flour your hands and form the mixture into a ball.

Roll out on a lightly floured surface to about 1cm thick and cut out using a 5cm ring (cookie cutter or small glass)

Lightly butter 2 large trays and place the biscuits , prick with a fork a couple of times on each.

Bake for approx 15 minutes or until light golden brown.

Remove from the oven, allow to cool for a couple of minutes before transferring to a wire rack to cool completely.
